本場のだしはもっと甘くてコクがあった気がする

I ate Tori-soba buckwheat noodles with chicken for breakfast.
Tori-soba is specialty of Yamagata, northern part of Japan, soup stock made by simmered chicken.
But today I made soup boiled chicken bone by myself.
Different from authentic one, it tastes sweeter and richer than mine.
